Nothing Nothing Tra La La

Yep you got it still waiting for our change of country.  I am beginning to sound a bit like a broken record.  When we hear something trust me if you don't hear me scream for joy all across the world it will be a miracle but if you miss that I will post here as soon as possible.

In the mean time I have been asked for a couple recipes for the dishes that I have been making and putting in the freezer.  This one has been a favorite in my family for years.  Unfortunately, I didn't take any pictures, sorry I will try to remember to take a couple of the finished product when we are devouring it.

Turkey or Chicken Taco Casserole

4 lbs de-boned chicken or turkey (honestly I never measure & use what ever I have on hand from left overs if it looks a little light I add a can of chicken or a boiled chicken breast, chopped up)
2 cans cream of chicken soup
1 1/2 pints sour cream (again I guesstimate a little)
2 small cans diced green chiles
1 1/2 lbs shredded cheddar cheese (another estimation I am sure I probably use more, we LIKE cheese)
12 corn tortillas

Mix Chicken with sour cream, soup and chiles
Tear each tortilla into 8 triangular pieces, (the best way to do this is just fold them and they break up)
Layer in a 9x13 pan - tortilla then chicken mix then cheese, repeat 2 or 3 times and end with cheese on top.

Refrigerate over night before baking

Bake at 350 degrees for 1 hour covered, uncover for last 15 minutes.

This is actually even better as a left over so make sure you save some for the next day.  Let me know if you make this and how you like unless of course you hate it then keep that to yourself :0).

I absolutely love this dish! But you forgot the garnish that really makes it POP!! Chopped fresh cilantro sprinkled on top!!!! Mmmm-mmmm GOOD!!
